Today’s nutritious recipe is banana bread. This is a twist on something that I found in a book somewhere. I don’t remember where but I changed enough so that it is mine. As you can see I’m using the applesauce that I talked about last week.
You will need:
2 tesp butter or margarine softened
3/4 cups sugar
2 cups bananas (about 4 medium)
1/4 cup unsweetened applesauce
1/4 cup honey
1 teasp. vanilla extract
2 cups Spelt or whole wheat flour
1/4 cup wheat germ
1/4 cup ground flax seed.
1 teasp baking soda
1/2 teasp salt
1/4 cup pecans or walnuts or both
1/4 cup chocolate chips
